Growing up in Queensland, Australia, I remember that I always seemed to have the ability to see the beauty around me no matter where I was or what the situation. Any photographer who cares deeply about their work is not being hired for the size of their lighting equipment or the brand of their camera. They are hired theoretically because they have the knack to seize a moment of time and capture it as no one else can, to see extraordinary beauty where others may only see ordinary.

When I am hired to take a portrait, or to photograph a restaurant or a building or food, I always seem to begin the day a little nervous, like a Broadway actor shaking off the jitters before a show. I believe this is because I feel a huge responsibility on every job that I accept to achieve the very best results from every portrait, every food shot and every environment photo I ever take.

I have been fortunate enough in my career to photograph some of the most legendary and talented chefs in the world, including Thomas Keller, David Bouley, Daniel Boulud, Charlie Trotter, and Alain Ducasse. Although their food presentation was near-perfect, finding the inner beauty of these master's dishes was still challenging. Yet I equally enjoy the challenge of photographing the work of lesser-known chefs, and I find that discovering the beauty of every chef's passionate work is my biggest reward.
